WTH??? It’s Thursday??? I can’t believe it.
I’ve been exhausted.
I worked 12 hours Saturday night, 12 hours Sunday night, 5 on Monday and 8 yesterday. Now I have a 12 hour shift tonight, tomorrow and a day off Saturday. I had SO much to do on Tuesday. I was planning on blogging but I was running around doing errands for 5 hours. Then it was time to relax.
At my new job, we don’t get breaks. Illegal? Yes. Do they care? Nah, not really. So when I work 3/4p.m-3 a.m, my last meal is lunch.
I’ve recently came across PBFingers recipe for egg white and oatmeal protein pancake. It’s amazing!!Top it with two big scoops of nut butter, banana slices, honey and I am set. Plus a piece of uncured bacon.
Doesn’t nut butter make everything a thousand times yummier???
For the pancake:
1/3 cup oats
4 egg whites
1 packet of Stevia
I combined everything in my Ninja for about, literally, 2 seconds. I like it to be a little gritty from the oats. Cook it for about 2/3 minutes on each side.
